Wednesday Words – Lemon Zest & Mint

Dynamic scent of lemon zest mingles with freshness of just picked mint leaves. The colours mingle in my mind; loud yellow, rain-spangled green. Once shredded, the mint takes on a darker tone, sweetens, seems to compliment the lemon zing in the air. Then the onions and leeks soften, sweetly caramelise, fragrant yet not clashing with the uncooked scents of lemon and mint. Later, the rising bread bakes, overcomes all other scents with yeasty, crusty breadiness.
